Pro tip: Twitter is the worst place for cooking advice, just use YouTube instead
I got into a thing last week with a dude on Twitter who swore you had to sear a steak 4 minutes per side on high heat. Tried it and ended up with a hockey puck lol. YouTube videos actually show you the color and sizzle, so you can tell when it's done right. Twitter threads are just random people yelling their opinions with no proof. Been following a channel called 'Guga Foods' for 6 months now and my steaks come out perfect every time. Anyone else find video tutorials way more reliable than text posts for cooking?

That 4 minute per side thing is exactly what got me too lmao. Do you actually follow the recipe to a T or do you adjust based on what you see in the video?

Yeah "adjust based on what you see" is huge. I had to learn the hard way that recipes are just rough guidelines because stoves and pans are all different. Now I watch the video a few times and pay more attention to the visuals than the timer.

Honestly I wouldn't trust Guga Foods for every recipe either though lol. He does those crazy expensive experiment videos with dry aged wagyu and stuff, not really practical for normal home cooking. Stick to Basics with Babish or Ethan Chlebowski if you want stuff that actually works with regular grocery store meat.
