Appreciation post: My neighbor's offhand comment about my burnt cookies actually taught me something

She said 'you're overmixing the dough, the gluten is making them tough' and after 8 attempts I finally tried her way and got soft cookies for the first time - has anyone else had a random stranger give you better advice than any recipe?

That thing about the gluten is exactly what happened to my buddy Dan. He was trying to bake bread for his girlfriend's birthday and kept getting these hockey pucks. His neighbor, some old retired baker dude, just happened to be outside when Dan was cussing at his oven. The guy told him his dough was proofing too long and the gluten structure was collapsing. Dan had followed the recipe to the letter but the temp in his kitchen was way too warm. He shortened the rise time and finally got a decent loaf. Now he swears by asking random old people for cooking advice instead of googling it.

I used to be the same way, always pulling out my phone to look stuff up. But then my dad's old neighbor helped me fix my truck once by just listening to the engine idle for thirty seconds, something no YouTube video ever told me about. Now I kinda get the appeal. Not saying old people are always right, but sometimes they got that weird specific knowledge you just can't search for.

ngl i'm side-eyeing this whole "ask random old people" thing tbh. like your buddy was clearly doing something wrong if he was following a recipe but not accounting for his actual kitchen temp. that's on him. a recipe is just a starting point. and honestly, who has time to track down old baker neighbors every time they wanna make muffins? you can just look up "dough proofing temperature" on youtube in 30 seconds.
