Baking to unwind left me with a sad, flat loaf

I turned to baking for stress relief and it's WONDERFUL for my headspace. But every time I make bread, it never puffs up and just sits there. Anyone have simple tricks to fix that without making the whole thing a chore?

Ugh, I've been there with the frisbee loaves. Does your dough actually double in size during that first proof? My big mistake was rushing it. I'd see a little puff and go for it, but it needed a full hour in my cold kitchen, sometimes on top of the fridge where it's warmer. That wait made a crazy difference.

Ugh I feel this, my last loaf looked like a sad pancake. Do you proof your dough somewhere warm? My house is kinda cold and that helped me a lot.

Right? @bettyh35, my oven light trick for warmth changed everything after a string of flat loaves.
