Custard pie fail turned into a happy accident with coconut

I tried making a coconut custard pie last weekend and totally messed up the measurements, put in way too much coconut milk and not enough eggs. It came out of the oven all jiggly and I thought it was ruined, but after chilling overnight it set into this super creamy almost pudding-like texture. My husband actually said it was the best pie I've ever made, go figure. Has anyone else accidentally changed a recipe and ended up with something better?

I wonder if the extra fat from the condensed milk is what makes the lemon bars set up like that, @flores.emma. Have you ever tried swapping in coconut cream to see if it changes the texture even more?

First time I tried something like that was with banana bread. Ran out of brown sugar and used maple syrup instead. Ended up with this weirdly dense, almost fudgy loaf that tasted like a pancake. Now I can't make banana bread the normal way anymore because everyone in my house complains it's too dry.

Dumped a whole can of sweetened condensed milk into my lemon bars once instead of just half. Figured they'd be a sticky mess but they set up like those lemon meltaway cookies. Now I do it on purpose every time. Sometimes messing up is just finding a better shortcut.
