Did I ruin my chocolate chip cookies by using melted butter my whole life? Let's hash it out.
I baked chocolate chip cookies for years thinking melted butter was the way to go because it mixed easier... then last Tuesday I left my butter out by accident and used it room temp. The cookies came out thicker and chewier instead of flat and greasy. So now I'm torn - is melted butter a lazy shortcut that hurts texture, or does it give a better spread for crispy edges? What side are you on for standard chocolate chip cookies?

Same thing happened to me last week... room temp butter is the way.

Oh man, I tried that exact same thing last Tuesday with my grandmother's sugar cookie recipe. I got so mad at myself for forgetting to leave the butter out the night before, just threw it in the microwave for 15 seconds and thought it would be fine. The cookies came out all flat and greasy, not fluffy at all. My sister even asked if I used margarine by mistake, which really stung. Now I always set the butter on the counter the minute I even think about baking, even if I'm not sure I'll make anything that day. Room temp really is the only way to go!
