Finally stopped overmixing my muffin batter and they actually came out fluffy instead of hockey pucks

Used to beat the heck out of it till it was smooth cause I thought that was right, but after my 4th batch of dense muffins last Tuesday I just stirred it 10 times gently and now I get those nice little domes - anyone else have a simple switch that fixed their baking?

That lumpy batter trick is a total game changer, glad it clicked for you too.

Jumping off what keith said about folding and walking away, I do the same with pancakes now. Barely stir it, let the lumps be, and they come out way lighter.

Funny you mention that... I had the exact same thing happen with cornbread. Kept beating it smooth and it came out like a brick. One day I got lazy and barely mixed it, left it lumpy, and it came out light and fluffy. Now I just fold it maybe 8 times and walk away. Feels wrong but it works.
