Found out the hard way that parchment paper has a wrong side

I was making chocolate chip cookies last Sunday and used the same parchment I always do. But half the cookies stuck bad and the other half came off perfect. Turns out the non-stick coating is only on one side (the shiny side) and I put the matte side up on that batch. Has anyone else made this mistake or am I the only one who never noticed the difference?

You said "the non-stick coating is only on one side" and I felt that deep in my soul. I have been doing this exact same thing for probably ten years without ever noticing the difference between the shiny and matte sides. It makes me wonder what other basic kitchen rules I have been breaking without knowing it - like maybe I have been holding my spatula upside down this whole time. At least now I know why my last batch of brownies turned into a sticky brick situation. Thanks for posting this, you saved me from a lifetime of stuck-on cookies.

I used to think the matte side was the smart choice because it seemed like it would grip better (kind of like how a rougher surface gives traction, you know?). But @phoenix_singh25 and the original post totally flipped my thinking here - now I see the shiny side is where the non-stick magic actually lives. That explains why my last batch of sugar cookies turned into a crumbly disaster while the first batch slid right off. Definitely checking both sides from now on before I preheat the oven.
