My brother's one comment about my sourdough crust actually fixed my scoring
I've been baking sourdough for about a year and a half now, mostly just for my own sandwiches and toast. Last month my brother came over and tried a slice, and he said my crust looked 'torn and sad' instead of having those nice clean ears you see online. I was kinda annoyed at first, but then I looked at photos from my last 10 loaves and he was totally right. The issue was I was scoring too shallow and at the wrong angle, like maybe 1/4 inch deep instead of 3/4 inch. I watched a few videos from bakers in Portland and switched to a curved lame with a wet blade. Now my loaves open up way better and the crumb is more even too. Has anyone else had a family member point out something that turned out to be a real flaw in their technique? What did they say and did you actually change your method?
