My neighbor Doris swore by the cold oven start for cheesecake, and I ate my words
I thought she was nuts when she told me over the fence to put the pan in a cold oven and bake at 325 for an hour. Did it for a family dinner in March and the top came out crack free for the first time in about 6 tries. Now I want to know if the water bath is even worth the foil wrapping.
Of course the neighbor who gardens over the fence has the magic cheesecake trick, meanwhile the rest of us are out here buying springform pans with our hard earned cash. Cold oven start sounds like witchcraft but crack free on try number one is hard to argue with. Honestly the foil wrapping is the worst part of the water bath, all that crimping and folding just to have water sneak in anyway. Maybe try it without once and see if the cold oven does enough on its own.
