My sourdough starter took 3 weeks to finally double in size
I tried making a sourdough starter from scratch back in January. For the first two weeks it barely bubbled and I was ready to toss it. Then I switched to filtered water instead of tap and kept it on the warm side of my kitchen counter. After day 21 it finally doubled in 6 hours and smelled like ripe fruit. Has anyone else had a starter take forever to get going or did I just mess up the ratios?

Ugh same thing happened to me. I switched to spring water and put it on top of the fridge where it's warmer and that finally kicked it off.

Right @emmaking that top of the fridge trick is honestly genius, I never would've thought of that myself. Had the same exact struggle with my starter last winter, it just would not bubble no matter what I did. Swapped to filtered water instead of tap and moved it to my microwave's top shelf where it's warmer, night and day difference. It's crazy how much of a difference just a few degrees of warmth makes for getting that fermentation going again. Glad you figured out a fix too, it's so frustrating when they just sit there looking dead.
