Scoring is more about controlling the expansion than just looks. A shallow cut opens differently than a deep one. It took me a while to figure that out too.

Yeah, that part about shallow vs deep cuts is key. I read an article once that said the depth changes how steam pushes the bread open. You're right, @the_sean, it's a control thing, not just decoration. Getting that right made my own loaves way better.
