Tried a new sourdough starter last Tuesday and it exploded on day 3

I came home to gooey dough all over my counter and somehow it even got on the ceiling. Has anyone else had a starter go that crazy that fast or did I do something weird?

Yeah, "gooey dough all over my counter" hits home. Day 3 is when mine did the same thing, turned my kitchen into a crime scene. You probably fed it too much flour or water, or maybe the room was too warm. A starter that active that fast means it's hungry or you didn't leave enough headroom in the jar. I'd double the jar size and keep it in a cooler spot next time, like the fridge after day 2.

Oh man, @smith.elliot, you totally nailed it! I had the exact same mess on my third day too, like the starter decided to explode everywhere. I actually switched to a bigger jar and kept it in the fridge after day two, and it calmed right down. The room temp thing is real my kitchen was way too warm, and that gooey dough was a nightmare to clean off my counters. So yeah, you're spot on about the headroom and cooler spot it makes such a difference!

Lol wait I always thought people were being dramatic about starters going wild, but now I totally get it after reading this. That ceiling thing is wild, guess I gotta be more careful with headroom from now on.
