Update: I thought letting cake cool completely in the pan was just a waste of time. A disaster with a red velvet cake last weekend changed my mind.

My chocolate cake fell apart last week for the exact same reason.

Wait, you baked a cake last week? I thought you were on that no-sugar diet your doctor put you on.

I mean, diet shmiet, right @kimw57? At least you got to eat cake before it crumbled into a chocolaty mess.

Diet or not, chocolate cake is worth it. Live a little!
