Update: I thought sourdough starter was a scam until my neighbor in Boise proved me wrong
For years I figured keeping a jar of flour and water on the counter was just a hobby for people with too much time. Then my neighbor Carol gave me a bit of her starter that she's kept alive since 2009 and I made my first loaf last Tuesday. It actually rose, and the crust cracked open like the pictures, which my old packets of yeast never did. Now I've got my own jar going and I check it more than my phone. What finally got you to try a starter, or are you still team dry yeast?
My wife brought home a starter from a coworker back in 2018 and I let it sit in the fridge for two weeks before touching it. Biggest thing nobody tells you is to feed it by weight, not cups. A kitchen scale changed everything for me, equal parts flour and water by grams, and it got way more active. Also don't panic if it smells like nail polish remover for a day or two, that just means it's hungry.
