Poured self leveler on a Tuesday and it set up in 8 minutes flat, not the 25 on the bag

Found out the hard way in my hall bath that the old plywood subfloor was sucking the water right out of it, so now I prime with a latex additive and mix small batches in a 5 gallon bucket. Anyone else run into a thirsty subfloor, and does a second primer coat actually buy you more working time?
