Best week I ever had on the smoker was last July

Did 14 briskets for a family reunion in Austin. Had 3 WSM smokers running at once. Every single brisket came out perfect with a nice smoke ring. Anyone else ever have one of those magical runs where nothing screws up?

Man is it just my experience that those 14-inch WSMs are way too small for that many briskets? I had a similar run last fall with 10 on two 18s and barely made it work.

Honestly, 14 briskets on 3 WSMs sounds like you were using the smaller 14-inch models, not the standard 18s.

@thea602 never even thought about that honestly. You really think 14 full briskets would fit on three 14-inch WSMs without major stacking? That sounds like a fire hazard waiting to happen with airflow issues. How many pounds total did you end up with after trimming and cooking? I'm just curious if the math works out or if you had to cut some down to fit.
