Had to pick between a pellet smoker and a stick burner for my first competition in Memphis

I went with the pellet smoker for the set-it-and-forget-it ease, but my ribs came out a bit too clean, missing that deep smoke ring. My buddy who used a stick burner placed higher with more bark. Do you think pellet smokers can ever get that real pitmaster flavor, or should I just learn to manage a fire?

Man, that smoke ring is a tough one on pellets. Have you tried using a smoke tube with wood chips inside the cooker? Some guys swear by them for extra flavor. What brand of pellets are you running? The wood type can make a big difference too.

Yeah @troychen, I fought that for a while. Switched to Lumber Jack hickory pellets and got a way better ring last time. A smoke tube with some apple wood chips helped a ton too.

Who even cares about a smoke ring if the meat tastes good, @emma_garcia?
