I finally stopped using my offset smoker for brisket after watching a Franklin class
That video where Aaron Franklin trimmed a packer brisket in under 3 minutes convinced me a pellet smoker can get 90% of the bark and tenderness without babysitting for 14 hours like I did with that old Oklahoma Joe last weekend, anyone else switch away from stick burners after seeing the consistency?

That Franklin video changed how I look at trimming too. I spent 8 hours babysitting my old stick burner last Saturday for a brisket that was still a little dry in the flat. My buddy let me try his pellet grill the next day, threw on a packer with a simple SPG rub, and it came out with a solid bark and that perfect jiggle without me touching it for 12 hours. I sold my offset the following week, no regrets.

Sold my offset after one pellet cook. Cold blooded. I guess that's one way to save on firewood.

8 hours on a stick burner is definitely on the long side for most packers I've done. I usually get mine done in about 6 to 7 hours depending on the size, but I run my offset hot at 275 to save time. That Franklin video is great for trimming, but a lot of people forget he wraps his briskets in butcher paper pretty early which really locks in the moisture. Pellet grills are convenient for sure, no argument there, but they don't give you that same smoky depth you get from a real wood fire. You can get close though, especially if you use a smoke tube filled with pellets.
