My offset smoker thermometer lied to me for 3 whole weekends
Drove down to Austin for a family cookout and brought my offset, figured it was running perfect at 250 according to the built in gauge. Turns out that thing was reading the firebox temp, not the cook chamber, so my brisket was sweating at 325 the whole time. After two ruined flats and a lot of cussing, I finally dug out a cheap probe therm and double checked it on the third Sunday. Why do these manufacturers even bother slapping a useless dial on there if it's just gonna lie to your face? Anyone else catch their stock gauge being off by a mile, or am I the only one who trusted it for way too long?
