Absolutely right, they've seen it ALL and know what's actually good that day. Always ask what they'd buy for themselves, not just what's on sale. Got them to cut a steak extra thick once and it was a GAME CHANGER for the grill. Those guys will give you cooking tips too if you just ask, way better than guessing from some blog.

Totally. They know which cuts have the best marbling that you can't even see wrapped up. Ask them what's been dry-aging the perfect amount of time, not just what's in the case. I've had them steer me away from an expensive cut to a cheaper one that was just way better that week for what I wanted. That inside knowledge on how to cook what you're actually buying is the whole point. It turns a random piece of meat into a meal you can trust to taste way better.

Seriously, following their lead like that can change how you buy meat for good. You learn what questions to ask and what to watch for, which makes every visit better. Soon enough, you're cooking with more trust in what you're making and eating way better food.
