Pro tip: spent $60 on a heat gun and it saved my brisket

I kept getting uneven renders on my packer brisket at competitions... finally dropped $60 on a high-temp heat gun to target the cold spots during the stall. That little thing evened out the cooking on a tough 18-pound brisket at a local cook-off in Tulsa last weekend. Anyone else tried using a heat gun for spot-finishing, or am I just wasting time?

You ever use a hair dryer on a frozen lock? Same principle, different smell though.

You mentioned drying the bark out too fast... I've actually charred my own eyebrows off trying to get too close to the brisket with mine. Guess that's one way to save on a haircut though.
