TIL I was smoking my brisket way too hot for years

A judge at the Kansas City Royal told me my bark was 'burnt, not set' after I ran my offset at 300 degrees for 6 hours. Anyone else have a simple mistake they didn't catch for a long time?

Man that's so real. I swear half the time you just get used to doing something one way and never question it. I did the same thing with my coffee for years, just using way too much grounds.

Oh man, measuring spoons are a whole other rabbit hole lol. I got obsessed for a while with these fancy magnetic ones that stick together in a drawer, but then I realized I was spending more time organizing them than actually cooking. Now I just use a random tablespoon from the silverware drawer and guess most of the time. It's honestly been fine for like 90% of stuff, but I had a muffin disaster last week where I used too much baking powder and they tasted like metal. So maybe I should actually go back to the spoon method after all lmao.
