Watched a buddy go from gas grill to offset smoker in 3 months

My neighbor Dave switched to an offset back in June and his brisket went from dry and tough to the best I've had outside a Texas joint. He finally figured out how to hold that thin blue smoke steady around 250. Has anyone else seen a big jump in quality after switching to a stick burner?

Honestly, did his bark get way better too or just the moisture?

Got a buddy who swears by keeping his bark in a specific spot in his smoker, claims it changes everything about the texture. I just let mine sit out on the counter a bit longer before I use it, seems to do the trick for me. Guess it all comes down to how picky you are about that snap when you bite into it.

You mean the feel of his bark? Yeah, in my experience that softens up a ton too once you get the moisture right.
