Went from cheap pellets to oak splits, brisket changed overnight
Switched from bagged pellets to real oak splits last Saturday. Same smoker, same rub, same 12 hour cook. The bark came out dark and crunchy instead of soft and dusty. That pellet brand I used for 2 years was producing this weird bitter taste too, I just got used to it. Anyone else notice a big jump when they moved off pellets to wood?
That exact same thing happened to me last spring. I thought I was just bad at smoking until I burned actual oak, turned out the pellets were doing most of the damage. The flavor got cleaner and the smoke ring was way deeper too, night and day difference.
