That faded diner menu in Amarillo predicted the whole ghost kitchen boom

I stopped at this old diner off Route 66 in Amarillo back in 2018, and the menu was so sun-faded you could barely read the prices. But the back page had this typed list of 'pickup-only concepts' sharing one kitchen, like five different fake restaurants from one stove. I remember laughing about it and taking a photo for my buddy who does food delivery apps. Now every empty strip mall has three ghost kitchens, and I keep thinking that menu was the canary in the coal mine. Anyone else stumble onto something like that years before it was everywhere?
