Feel your pain on this one. Tbh, wheat paste is super finicky depending on the humidity and how fresh the flour is. I've had batches that looked perfect one minute then turned into a clumpy mess the next. Honestly, the trick I've found is to cook it a bit longer on low heat and add a splash of vinegar to help it bind. Ngl, sometimes you just gotta scrap the whole thing and start over with less water.

Oh man, the vinegar trick is genius! I've never tried that but I bet it helps. Yeah humidity is a beast where I live, I've had batches go from perfect to lumpy in like 5 minutes. I started sifting my flour twice before mixing and it helped a ton. Just gotta be patient with it.

Good catch from @jenny_lane12 on the vinegar trick, that's something a lot of people skip. Only thing I'd gently push back on is the cooking time. In my experience, going longer on low heat can actually break down the paste too much if you're not careful. Once it starts pulling away from the sides of the pot, you're pretty much done. I've ruined more batches by trying to cook it a little more instead of just taking it off the burner. Your mileage may vary though, different flours act totally different.
