Man, I wish I could say I hand mix like a pro but last time I tried that I ended up with more mortar on myself than in the wheelbarrow... Power mixer saves my clothes at least. That paddle whipping thing is real though, I've definitely had batches that looked like latte foam instead of mortar.

Power mixers just introduce air into the batch and make it weaker in my experience. Hand mixing in a wheelbarrow with a hoe gives me way more control over the consistency and I can feel when the sand and cement are fully combined. Those paddle attachments whip the mortar up too fast and it ends up foamy on set. Plus all that electricity usage adds up when you're mixing multiple batches a day, a sharp hoe and some muscle power never runs out of battery.
