Hit 250 meals on a $75 monthly pantry challenge, surprised myself
I started tracking every meal I made from a single $75 restock at Aldi in Austin back in February. Hit my 250th meal yesterday, which comes to about 30 cents per serving before spices and oil. What shocked me was how much came from beans, rice, and frozen veg, I honestly didn't feel deprived once. Has anyone else tried a strict dollar cap per month and seen a number that blew their mind?
The beans and rice combo is what got me too when I did something like this a couple years back. Dried beans are stupid cheap and a bag goes way further than people realize. My tip is to cook a big batch once a week and freeze what you don't eat right away, saves you from getting bored of the same pot. Frozen veg is the other cheat code, it's just as good as fresh for soups and stir fry and it never goes bad on you.
