Hot take: I used to think frozen vegetables were a waste of money for cooking
My girlfriend kept buying bags of frozen broccoli from Walmart for $1.28 and I finally had to admit they actually taste just as good as fresh after I roasted them with olive oil and salt last week, has anyone else gotten over being a veggie snob?

Oh man, right there with you! I used to think frozen veggies were for lazy people until I tried roasting frozen cauliflower with garlic powder and paprika. Now I buy those big family bags from Costco and roast them on sheet pans like every other week. The texture comes out way better than fresh if you crank the oven up to 425 and give them enough space to get crispy, not steamed.

Have you tried freezing your own fresh veggies when they're on sale? I was the same way until I got a bag of frozen peas from Aldi for 89 cents and threw them in some mac and cheese... now I buy frozen corn too because it's way sweeter than the fresh stuff this time of year. That's a good trick with roasting the broccoli though, I usually just steam them but I'll give the oven a shot

Roasting really does change everything with broccoli, that's the only way I'll eat it now. I used to do the steam-in-bag stuff but it got so mushy and sad. For the freezing thing, I've been buying bags of frozen mixed veggies when they're on sale and just tossing them into soups and stir fries, it's way less pressure than trying to use up fresh stuff before it goes bad. The corn being sweeter frozen makes total sense to me too, fresh corn this time of year can be such a gamble. I haven't tried freezing my own yet but maybe I should give it a shot with bell peppers when they're cheap.
