I swapped chicken for canned mackerel in my usual curry and it was way better

I was broke after paying rent last month, so I grabbed a 79 cent can of mackerel from the discount shelf instead of my usual chicken breast. Threw it in with potatoes, a cheap onion, and a basic curry powder. Honestly, I thought it would be a sad, fishy mess. But it was amazing, super flavorful and way more filling for like a quarter of the cost. I've made it three times since. Anyone else have a weird pantry swap that actually worked out?

Oh man, mackerel is a total secret weapon. That oil it's packed in makes the whole sauce richer. I always keep a few cans for exactly that. Works great in tomato pasta sauce too, just breaks down into something amazing.

My aunt used to make this weird tuna casserole with cream of mushroom soup and crushed potato chips on top. We all made fun of it until we tried it, and it was shockingly good. She called it her "depression dinner" but we begged her to make it. Sometimes the weird cheap stuff just hits different.
