My cheap rice cooker broke and I had to figure out dinner for a family of four with $12
It happened last Tuesday night, right before dinner. The thing just died, no warning. I had planned on a big pot of rice to go with some beans. I had $12 cash on me and the grocery store was closing in 30 minutes. I grabbed a bag of potatoes, a carton of eggs, and a big onion. Chopped the potatoes small so they'd cook fast, fried them with the onion, and scrambled the eggs in at the end. It wasn't fancy, but everyone ate. Has anyone else had a kitchen tool fail and had to improvise a whole cheap meal on the spot?

That's some quick thinking right there. Chopping the potatoes small is a total lifesaver when you're in a time crunch. My old can opener gave up once when I was trying to make chili, had to get creative with a knife and a lot of careful prying.

Honestly I used to be a big potato chunk purist, thought small dice was just for looks. Then I got stuck trying to roast whole baby potatoes on a weeknight when I was already running late. Took forever. Now I hack them into small pieces every time, they cook in half the time and still taste great. Changed my whole weeknight dinner game.

Respect the potato dice, it's a legit pro move. @brookeellis, your can opener story reminds me of the time my blender motor burned out mid-smoothie. Had to mash frozen fruit with a fork and a lot of anger, ended up with a weird chunky slush that the kids loved. Sometimes the broken tool forces you into a better method.
