Saw a $1.50 cabbage feed a family of 4 at a community dinner in Tulsa
I was volunteering at the church hall last month and the cook stretched one cabbage into soup, slaw, and fried patties for everyone. Any other cheap veggie tricks that go further than you'd think?

Figure out what parts of the veggie you usually toss. Carrot tops, celery leaves, even broccoli stems can be chopped up fine and thrown into soup or fried rice. People think theyre trash but they're just extra flavor and bulk. Also, save the water you boil potatoes in, it makes a great base for gravy or bread. You're paying for that starch, might as well use it.

The potato water tip is a solid one, I've been doing that since I tried to impress a date with gravy and it came out tasting like sadness. My own trick is using the water from soaking beans, makes any soup thicker and I pretend it's a fancy stock. Honestly my cooking is so basic I could stretch a single carrot into a week of meals if I just squint and call it dinner.
