Watching a guy at the food bank in Portland make a huge pot of soup from just a bag of lentils, a few carrots, and an onion convinced me that a good meal doesn't need meat or a lot of cash.
Has anyone else built a whole week of dinners around a single bag of dry beans or lentils?

Yeah, I used to just grab whatever looked good at the store. But then I saw how my friend's family shops, they only buy what's on sale that week and build meals around that. No fancy recipes, just what's cheap. It made me realize how much choice I had that a lot of people don't.
