After years in the shop, I question dry aging hype.

Too much aging can make beef taste funky, not better.

Just ends up tasting like basement air.

My last apartment had that basement air taste on tap. I drank so much of it I'm probably part mildew now. Explains my allergy to sunlight.

My old roommate swore by it for years until I tried that cheap brand from the gas station. Honestly, you're right, it just tastes musty now.

Wait, are we talking about the same thing here? That gas station stuff always leaves a weird film in my mouth. I'd take a little musty over that chemical aftertaste any day. Maybe your old roommate was onto something after all.
