Finally got my pork shoulder trim time down under 20 minutes

I was taking forever on whole shoulders, like 45 minutes each, and it was killing my prep. Last month I watched an old timer at a shop in Knoxville just roll the shoulder on the block while he trimmed. Tried it myself with a 6-inch curved boning knife, keeping the fat cap down. After about 10 shoulders, I got the motion down. Now I'm consistently hitting 18 minutes from start to clean block. Anyone have a different method for speeding up shoulder work?

Nice! I found that keeping my knife sharp and using the shoulder's own weight to guide the cut saved me a ton of time too.

My buddy Jake spent 45 minutes wrestling with a dull knife last weekend before he gave up and ordered pizza.
