I finally figured out why my steaks were coming out chewy after watching a guy in Denver
I was at a demo in Denver last month, watching this old timer break down a whole ribeye. He made this one cut against the grain where I always go with it, and it clicked. I mean, I knew the theory but seeing it in person with the muscle fibers right there changed how I trim everything now. Anyone else have a moment where watching someone else work just flipped a switch for you?

The old timer probably saved you from chewing on rubber for the rest of your life. I had a similar moment watching a butcher in Austin trim brisket and realized I had been slicing everything completely wrong for years. Now I just pretend I knew all along and nod wisely when someone asks about it.

Pretending you knew all along is the only way to keep your pride intact. I still nod along when anyone talks about knife work, secretly hoping they don't ask me to demonstrate. Keeps the peace and saves me the embarrassment of admitting I learned from YouTube last week.
