I switched to a 10-inch breaking knife for my primals last month and my trim waste dropped by almost 15%

The shorter blade gave me way more control on the seams, so I'm not leaving as much good meat on the fat caps, and has anyone else found a specific tool that cut down their waste like that?

What about keeping your knives sharp? I let mine go a little too long once and it was like I was tearing the meat apart, which left a ton of waste. A quick touch-up on the steel made a huge difference, kind of like how @patricia78 found the right knife stiffness. The right tool only works if it's actually sharp.

Yeah, I had the same thing happen when I switched to a stiff boning knife for breaking down shoulders. I mean, the flex in my old one was just too much, made me cut into the meat when I was trying to follow the bone. This one keeps me right on track, so I'm not ruining good cuts. It felt like a small change but the waste just dropped off.

Man, a sharp filet knife is my secret weapon for that.
