Just got back from a meat processing class in Omaha

Saw a guy there use a bandsaw to split a whole hog in 90 seconds flat. Anyone else ever ditch the cleaver for power tools on big jobs?

That line about the bandsaw doing the job in 90 seconds flat really sticks with me. It makes me think about how we're always looking for shortcuts in everything, not just cooking. I see it with people trying to fix up their houses, they'll rent a power tool instead of sawing by hand because it saves time. Even in how we buy groceries, we use self checkout to skip the line, even if it takes just as long. It's like once you see something done fast, you can't go back to the slow way, even if the slow way worked fine before.

Wait, isn't a bandsaw in a meat plant kind of normal though? I mean I've seen videos of those big industrial bandsaws in processing facilities, and they're pretty much standard equipment for breaking down whole animals. It's not really a shortcut in the same way as like, using a self checkout at the grocery store. Those saws are built for speed and safety when you're dealing with a whole hog, a cleaver would take forever and honestly be way more dangerous if you're not super experienced with it. I guess it's more about using the right tool for the job than just looking for a faster way.
