Just read that a single beef carcass can yield over 600 different cuts and products. Found it in an old textbook at the shop.

Wow, that's wild! Makes you wonder how many of those cuts just get ground up for burgers and sausage.

Read an article that said a huge amount of "trim" from fancy steaks ends up in the grinder. Kinda makes sense, but it's still surprising.
