Brine retention might be the real culprit hiding in your process, not the trimming itself. A bad salt ratio or timing can cause moisture loss way beyond what cutting off fat would do. Next batch check your salt percentages before you blame the knife work.

Salt timing is everything honestly. Get the equilibrium off by a few hours and you're basically pulling water out instead of keeping it in.
