Saturday rush nearly killed my shoulder, but the tri-tip sellout saved the day
Last weekend we had a run like I haven't seen since before the holidays. I was solo on the cutting table from 7am until nearly 4pm, and my right shoulder was screaming by noon. We had a catering order for 40 pounds of tri-tip that I trimmed in the back between counter customers. The crazy part was how many people asked for a specific thickness on their steaks, like three separate folks wanted 1.25 inches exactly. I sold out of tri-tip by 2pm and had to talk four people into flank steak instead. The register total hit $4,700 for the day, which is about double our normal Saturday. Anybody else ever have a day where one cut just carries the whole store? What do you do when you run out of the crowd favorite early?
