That one Saturday I went through 60 pork bellies before noon
It was about 3 weeks ago and the whole day just felt off from the start. The delivery truck showed up late with half the order, then the walk-in compressor started making this grinding noise. But somehow by 10am the line was out the door and every single person wanted belly or ribs. I had maybe 30 bellies prepped for the weekend, thought that was plenty. By 11:30 I was cutting fresh ones as fast as I could and still running out. Ended up breaking down 60 total before noon, my arms were shot but we sold through everything by 2pm. Never had a Saturday like that, usually the lunch rush is burgers and steaks. Anyone else get random days where one cut just blows up for no reason?
That compressor grinding noise is always the first sign of a cursed day, swear it happens every time. We had a random Tuesday last month where everyone wanted nothing but brisket and we sold out by 1pm, still no clue why.
