Tried to sharpen a boning knife mid-service, nearly lost a finger in front of a health inspector
Last Saturday at the shop on 5th and Main, I was rushing to trim 30 racks before the inspector walked in and caught my hand slipping off that wet steel. Inspector just said "nice catch" and wrote me up for a dirty floor drain instead, anyone else have close calls that somehow ended with a lesser violation?

30 racks before an inspection is already a setup for disaster, so honestly the finger was just part of the day. Last time I rushed a steel mid-rush I cut my thumb so bad the inspector made me bandage up before he would even look at my line. At least he got a show out of your near miss.
