Unpopular opinion: I used to think a boning knife was just a boning knife.

For years I used a cheap, stiff one for everything, but after a shoulder injury last fall I switched to a flexible Victorinox. The difference in how it moves around joints is huge and my hands don't ache as much at the end of the day. Anyone else find a specific tool change made a big difference for them?

Swear I thought the same thing until I tried sharpening my old one regularly. A decent edge on cheap steel still beats a dull fancy knife most days. Changed my whole outlook on buying new gear.

Right? It's like we're sold on buying better stuff when we could just take care of what we already have. How often do you sharpen yours now?

Honestly "changed my whole outlook" feels a bit much for just sharpening a knife. It's not that deep.
