Visited a butcher shop in Austin that dry ages in an old fridge
Saw a guy there using a $30 probe thermometer instead of feeling the meat like my grandpa taught me, anyone else trust touch more than gadgets?

You ever stick your thumb in a raw chicken and burn it because you forgot the pan was hot? That's why I use the gadgets.

Chicken at 165F is way lower temp than a hot pan though, like 400F plus. Youd have to hold your thumb in there a good few seconds to burn it that bad. But yeah I get your point, thermometers just save the headache.

You ever do that thing where you poke a pork chop and think "yep that's medium" then cut into it and it's still mooing? That's my life with touch. Burnt my whole palm once on a cast iron skillet trying to feel if a steak was done. Now I use a cheap probe for thick cuts but still go by feel for thin stuff like burgers. Grandpa would be disappointed but my fingers are grateful.
