Watched an old timer break down a whole steer with just a 6-inch boning knife at the county fair demo last weekend

He did every cut in under 45 minutes without switching tools once, and now I'm questioning my whole kit setup - has anyone else gone minimalist like that and regretted it or found it works better?

Wait, no steel at all? That just seems like asking for trouble halfway through the job. @jordan_henderson13 I bet he must have been stopping to sharpen it on something, maybe the edge of his boot or a stone he kept in his pocket. I've seen guys who can make a knife last a whole shift by using the right technique, but a full steer breakdown is a whole different animal. What kind of edge geometry lets you go that long without any touch up? That's wild to me.

Did he mention if the lack of a steel made that blade harder to keep sharp mid-job?
