But what about the times you mess it up with a knife? That shredded turkey story is a perfect example. You end up wasting money on the meat you ruin, not just the tool. Is saving a few bucks on a gadget really worth the risk of wrecking a whole holiday meal?

Honestly can't imagine needing a tool that specific. I just use a sharp knife and go slow, works fine for the few times a year I need to do it. Seems like a lot of money unless you're doing this professionally every single day.

My friend Mark said the same thing about "just using a sharp knife" until last Thanksgiving. He was trying to de-bone a turkey breast for hours and totally butchered it, we had shredded turkey bits instead of slices. He bought the tool the next day and now swears by it for holiday meals. Sometimes the right gadget saves you from a huge mess even if you only use it once or twice a year.
