Guy at a Phoenix pop-up told me he still buys from a chef who got dropped in 2021, and he said it like it was nothing
I ran into this guy at a food pop-up in Phoenix about 5 weeks ago, and we got to talking about a chef who got called out in 2021 for how he treated his crew. The guy shrugged and told me he still eats at that chef's new spot every Friday, quote: "he yells, but the food is good." That stuck with me because it wasn't some big defense, just a tiny quiet choice that keeps the guy in business. Five years later this chef has 3 locations now, and the people who dropped him just kind of drifted off. How do you even push back on that when the person isn't arguing, they just keep showing up?

He yells, but the food is good" is the same shrug people give their barber, dentist, mechanic, whoever.
