I thought the 'informational interview' thing was just corporate fluff until last month

A friend pushed me to set up a 20 minute call with a senior person at a company I liked. I was sure it would be awkward and pointless. We talked about their actual day to day work, not just the job listing, and they mentioned a new project starting in Q3. That tip let me tailor my application perfectly. I got an interview invite last week, which never happened when I just sent in my resume cold. Has anyone else had a specific question that really opened up a chat like this?

Wow, that's awesome it worked out for you. I actually think calling it an "informational interview" is the fluffy part, not the idea itself. It's just talking to someone who does the job. My go-to question is asking what parts of their job they had to learn after they started, stuff you can't really get from a job post. That always gets them talking about the real details.
