Bought a $300 immersion circulator back in 2015 and it changed my prep game

I mean, it felt like a huge risk at the time for a small kitchen tool. We started using it for perfect eggs and then for big batches of short ribs. It let us prep proteins way ahead without losing quality, which saved us during a slammed Saturday night last month. Anyone else find an old piece of gear that just keeps paying off?

My old KitchenAid stand mixer. Got it as a wedding gift in 2010 and it's still going strong. I use it at least twice a week for pizza dough and cookies. It just feels like a tank that will never die.
